What species are you targeting?

If your target species are fish such as pommies and stumpies. the flesh on its own can be deadly. But I have used it with chokka as a base as the peckers tend to have a feast on it. A general presentation would be a chokka base, a tassel or two with a few cutlets of the cray fish wrapped around it. Best to look for working banks and throw there.

When you shaping the meat to wrap around the chokka, it's also a good idea to beat all the off cuts in the chokka. A little extra smell is always a good idea

The only time I'd pin an entire Crayfish tail if I know there's a BIG Musselcracker waiting on the other end. Bit of a waste otherwise...
Use small pieces the same way as you would use prawn.
I would do it the opposite to Ades... I'd cover the Cray with Chokka to protect it, because he's right, all the peckers in sight will be drawn to the Cray scent.

Small pieces on a double up trace with size 1 or 2 hooks works perfect for bronze bream and stumpies and black tail

How do you guys keep the peckers from stripping a bait like cray tail?  I second the idea of wrapping it in chokka or something.

Around these parts I can't even cast a unbeaten occie leg from the beach without being stripped in seconds.

Unbeaten Chokka is as tough as bait gets. When peckers are around I always wrap the good stuff with unbeaten chokka. Takes them a while to get through to the middle. Except if there are are tobies/puffers around... they destroy everything with those gnashers.

My Ultimate bait- Cray tail pieces onto the hook first, then small Occy leg hooked once to dangle below hook, followed by a wrap of Chokka around Cray pieces.
Not many fish will swim past this and not take it!

What works for me is to go on a fishing trip with Reefz and co. That way the fishing is normally so bad  that even prawn and cray baits come out looking brand new :hehe:
