Jaundice perhaps
Gareth the male trout usually change colour during the spawning season, and the colour can vary a lot, some go really dark brown and in others the red colour also darkens a lot.
WK - don't know why that fish is so yellow, but I doubt it's a golden trout; we could see the following changes in our brood stock when they were ready to milk - the hens went much darker and the cock fish developed a bright red patch on the cheek. I am almost 100% sure your fish is a hen - the cocks lower jaw ends in a pronounced hook.
