Well, most species have a male:female ratio of 1:1 or around that... so it really doesn't matter... on the other hand it IS VERY difficult to distinguish male/female in most bony species... with sharks and rays that's easy ...
Some species do have morphological features that do them apart immediately (e.g. dorado), but in others (e.g. couta, tunas, even bills) only histological examination can be certain....
Bottom line here is: the most fecund individuals (be it males or females) are the largest ones!!!! The put more eggs and these eggs are more viable that smaller individuals... which doesn't help because these are the trophies most anglers want to take a pic off ... back at the club!!!!
